There was a day when I spent way too much time trying to get rid of weeds. Now, almost every “weed” has a useful purpose and I’m happy to have them. Today I was going to go out with the weed whacker and trim around my raised beds but first, I picked a bunch of henbit. There’s enough out there that I can cut the tops two sets of leaves for our consumption, then use the weed whacker for the rest. I cut enough to fill two trays in the freeze dryer and make a tincture. I will go out and cut more in the morning and use those in an omelette. The leaves and flowers are great in salads too. I like them a lot!
I was able to fill a 1-1/2 pint jar with leaves and a few flowers and made my first tincture of the season.

If you’re interested in the “purported” health benefits of henbit, please Google it. If you aren’t familiar with this little weed, you may be surprised. I have no idea what’s true and what’s not true but if any of it is true, that’s good enough for me.
