There are sometimes more than one mushroom vendor at the farmers’ market. The one I really liked hasn’t been vending lately and we were told they could never get their set up going so I have no idea about them. The one who is almost always there has the oyster mushrooms so I bought a large hunk of them Saturday.
My favorite way to cook them is to slice them, saute them in butter, sprinkle a little flour over the mushrooms, add cream, salt, pepper, a bit of cajun seasoning and then parmesan cheese. So simple and so quick.
Today I added asparagus but this is the time when I’m adding asparagus to everything – oatmeal, ice cream, lemon meringue cake . . no, not really but almost.
I served it with the palmini that Vince had found at the pallet store.
I actually loved it. I’m not sure that Vince loved it but he said he liked it. If I was on a low carb diet (I should be!), I would definitely be using this.
I served it with mozarella and basil in olive oil and balsamic, along with garlic toast. I was out of tomatoes for the salad.
The mushrooms were grown by someone local. I grew the asparagus and the basil. The mozzarella was made by a local man, who was actually making it as we watched at the farmers’ market. I made the sourdough bread. Can’t get much more homemade than that. I could have made the pasta .. that would have made it a 100% homemade meal but . . there are other things to be done around here. Can’t do everything.
Vegetables and Pasta in Cream Sauce
- 4 T. butter
- Variety of veggies
- 2 T. flour
- 2 cups cream
- 1/4 cup parmesan cheese
- salt and pepper to taste
- pasta of your choice (cooked and kept warm)
Melt butter and saute veggies. Sprinkle flour over the veggies and cook 2 more minutes. Add cream and stir to make a smooth cause. Add the cheese and stir til it melts.
Add seasonings and more cream as needed to get the consistency of the sauce you desire.
Add pasta to veggies and stir.
Almost any veggie can be used: Broccoli, carrots, squash, mushrooms, sugar snap peas, asparagus, even tomatoes could be added.
Also, grilled chicken, shrimp, etc. could be added.
This is quick and delicious!
