Vince loves biscuits and sausage gravy. I don’t think I had ever eaten those together until I met him. I had seen them and seen other people eat them but that’s not something my family liked. I’m learning to like it but I usually eat the gravy on top of my eggs and have my biscuits with butter and jelly.
I try to make biscuits with sausage and gravy often enough but since it isn’t something I like, it doesn’t pop up on my radar enough for him. This morning when I woke up, I thought about biscuits and gravy and I was looking forward to it. Vince was happy when I asked him if he wanted that for breakfast.

I also have never loved scrambled eggs but I’m starting to like them more. I think for me, the secret is to whip them up enough and cook them slowly and stir constantly so I don’t see any of the white part of the egg.
Some days, I feel like I’m such a lazy cook. Other days I feel like I’m a smart cook. Probably some days I’m lazy and some days I’m . . well, most days I’m lazy! 🙂
This is my current favorite biscuit recipe. Here’s what makes me lazy or smart. I will usually mix up about 10 x the recipe using the flour, baking powder, soda, salt and I use 1 tsp. of sugar per batch and leave off the honey. I mix all that up and divide it up. I put it in half gallon jars. This will usually fill three half gallon jars. I vacuum seal them and then when I’m ready to make biscuits, I measure out 2-1/2 cups plus 1-1/2 T. of the mix, work in 1 stick of butter (I use my hands), add 1 cup of buttermilk and that’s it.

I love flaky layers and look at that biscuit. Yummy flaky layers!
For me, this recipe makes 9 biscuits. Vince usually eats 2 and I eat one so that gives us enough for three breakfasts. Tomorrow morning, we’ll have sandwiches with ham, cheese and fried eggs on our biscuits. Usually, we end up munching on the other ones. Vince will make a sandwich during the day , I’ll sometimes slice one in half, and “fry” it with a little butter in a skillet and have that with jelly. Biscuits never go to waste around here.
A great thing about having the mix is if we go somewhere for a weekend, or if we want biscuits within dinner, they’re super easy and quick to make with the mix already made. Or, if we want pancakes, I can use 2 cups mix, 1 cup of milk, 2 eggs, about a teaspoon of extra sugar, 1/4 cup melted butter and a bit of vanilla and we’ll have perfect pancakes. Maybe I’ll make pancakes for breakfast tomorrow!

For the sausage gravy, I can breakfast sausage in half pint jars. That’s the perfect amount of sausage for gravy for the two of us. I talked about it in this post. I simply brown the sausage, drain off as much grease as I can, put it into jars and pressure can it.
This morning I used two jars to make more gravy because I wanted extra because Vince will probably want to save a couple of biscuits and have biscuits and gravy Monday morning when I won’t be fixing breakfast.
To make the gravy, I simply open the jar, dump the contents in the skillet, heat it all up. Depending on the amount of grease in the jar, I will add 1 to 1-1/2 T. flour, cook the flour a bit – not til it’s brown but until it’s “done” and would no longer taste like raw flour, then add milk while heating and stirring, adding more milk til it’s the consistency I want. Then I add salt and pepper and that’s it.

We took my mom out for breakfast for Easter and Lee got biscuits and gravy. Like you, I didn’t grow up with them but his California grandmother made them and he loved them. He did enjoy them yesterday!!!

i love biscuits and sausage gravy, hubby not really. i looked at your other posts but don’t see a link to canning recipe for it, can you direct me? 1/2 pint size would be ideal, it wouldn’t take me weeks to use it up! Ty so much.

I don’t follow a real recipe so this is considered rebel canning. I brown the sausage, put it into half pint jars and pressure can it as you would any other meat. I use the time/pressure for a pint jar even though I’m canning in half pints.

That biscuit looks amazing! I laugh when you talk about being lazy…you are anything but!
I’d say you are efficient. I love hearing about how you do things and manage your food with the canning/freeze drying, etc.
