Dinner tonight looks like it’s going to be yummy! We’re having Crustless Taco Pie.
This morning Vince took my car to get it inspected, brought it back, took his car to get it inspected and then he was going shopping. Yay! Cars inspected, shopping done and I didn’t have to leave home.
When I’m home alone . . where’s my favorite place to be? The kitchen! I went ahead and got dinner for tonight ready.
All I have to do is take it out of the fridge, stir it up, pour it into an already greased pie pan, and bake it. BAM! Dinner done!
The only change I made to the recipe was adding onions and a jalapeno pepper to the ground meat.
The recipe called for 1/4 cup of salsa. I had freeze dried pico I had made and freeze dried so I added a little water and this is what I used for the salsa.
That works great and I know exactly what’s in it.
Doesn’t that look good? That’s the eggs, cream, green onions and salsa. Then I added the browned ground beef, poured it all into the jar, dumped the cheese on top so about 2:30, I’ll pour it into the pie pan, bake it and then I’ll tell you how easy it was and how yummy it was! 🙂

Oh, I wish I could eat the way you eat! I have so many dietary restrictions. I have Interstitial Cystitis, so nothing acidic or spicy, and I have Gastroparesis, so nothing with skins, no roughage, no whole grains, no raw fruits and veggies, no seeds…the list goes on and on. That pretty much leaves me with things that are white and not good for you. I miss real food!!!! Your dinner menus always look so good! Then I read everything that says to give up gluten and sugar to reduce inflammation and pain and that would leave me with..water!!! Enjoy your dinner!

That’s not good. I’m sorry. I realize how lucky I am that both of us can eat most anything we want to eat.

It was really good. I’d compare it to a Mexican meatloaf but better because it was very moist.

I’m baking the same thing right now! Added fresh onions as well. It’s going to be 100 degrees here today, so am doing baking a bit earlier. I don’t mind reheating in the microwave at suppertime.

This looks yummy and I could easily make it WW friendly but I think I have to pass with my egg allergy. It’s just sucks to not be able to eat eggs.

That’s something I never knew about you! It’s one thing to avoid fried or boiled eggs but everything that has eggs in it . . that’s tough. What about egg substitutes? Would they work for you?

Why put the egg in this? Does it have something to do with your numbers? Cause I liked everything till that. Just couldn’t figure why.

I put egg in my meatloaf. I think it’s the cream and the eggs that make it creamy and moist. I’m sure there are recipes that don’t use the eggs or cream. There were four eggs (I think) and it made 8 – 10 slices so that’s less than half an egg per serving.

I plan to make this on Thursday. I made the Black and Blue Hamburger Pie from the same website last night. It was very good with blue cheese. Both my husband and son liked it.

From reading the original recipe, I think that’s a winner. I read about some kind of pepper the other day that has the flavor of jalapeño without the hot. I might look around for those, if I can remember what they were. LOL
