Vince found this recipe for a Crustless Asparagus & Spinach Quiche a couple of weeks ago. He’s been asking for it so yesterday I made it. To me, the recipe sounded kinda “blah” and nothing in it seemed real exciting but it was really good. I was a bit pressed for time so I made it right by the recipe. Next time, I’ll add bacon or ham (or both), jalapenos and maybe mushrooms. But, it was great as it was.
I was talking to Nicole on the phone while making it so instead of digging around for a pie pan that wasn’t metal and making noise, I grabbed this dish and it worked fine but not your typical quiche dish. It goes in the dishwasher where the metal pie pans don’t. 🙂
It only has 2 carbs per serving and was a great alternative to bacon and eggs for breakfast.

I just made a crustless quiche in my Instantpot that turned out yummy. Very versatile dish!

That looks delicious!!! I want to try it once our asparagus comes up……..that is if they can find their way through all this snow we have in Nebraska!

Sounds good. I might try it with broccoli instead of asparagus, since I’m more likely to have broccoli on hand.

Oh, I love quiche, so I’m going to have to investigate this. Does that make it more like a frittata?
