We have leftovers in the fridge from every meal this week – leftover soup; leftover steak; leftover chicken. We had breakfast (fermented oatmeal and bacon) so I wasn’t wanting much dinner. Vince wanted salad with leftover steak and blue cheese crumbles. I said “I’ll eat a few raspberries” but I knew I needed protein. Vince wanted brie but he wanted some kind of crackers. I remembered having seen the recipe for Parmesan Italian Bread Sticks in the Craveable Keto book. I showed the picture to Vince and he thought that was just what he wanted!
They aren’t like a big slice of warm sourdough bread but when you haven’t had bread of any kind in a month or so, they’re delicious and they worked great with the brie. We slathered it on the bread sticks and gobbled them down. Actually, I ate one breadstick with brie, a couple slices of soppresata, a couple of olives from a Greek mix and a bit of salad.
Another day of successful dieting!

Since I am dieting on my own and haven’t had bread since June 27th, I was very excited to find muffins in the freezer section of Target that are okay on my diet (not Keto–just no sugar, low cal). If you are interested, I recommend them highly and there is no waste since you microwave only what you want and the rest stay frozen. That’s such a win for me since I don’t particularly care to bake for just me. If interested, they are Garden Lites Veggies Made Great brand and I bought the banana chocolate chip. They are 120 calories each and gluten free…there is 22 grams of carbohydrates so that may make it not okay for Keto. I don’t eat one every day so I can justify it in my mind. They have 10 grams of sugar also. I think my son said you’re not supposed to eat more than 19 carbs a day so this may not work for you. Going to have my $3 chef salad from Wal Mart and a muffin again tonight…not exciting, but that’s okay. You guys are doing great!
