For our “family” dinner tonight, I fixed Pressure Cooker Cihinese Lemon Chicken. Sorry but I didn’t even take a picture.
This was about the easiest thing ever that I’ve made in the pressure cooker. It was totally delicious. For anyone who doesn’t like really sweet food, you might want to cut back on the sugar.
After I made it and tasted it, I was wishing I had cashews because this is the perfect recipe for cashew chicken!
I tripled the recipe for 10 adults and we still had leftovers . . which makes me happy because we’ll have it again in the next few days.
It was a lazy girl’s dinner – I made salads that were the mix that come in the bags; I used frozen garlic bread sticks and made rice in the pressure cooker.
Glad it’s over – glad I can sit and knit.

Sounds delicious. I’m trying NOT to add another kitchen tool, but the Instant Pot recipes make it so tempting.

lemon chicken is my go to menu item at our local schezwan restaurant. i don’t have an instant pot, but am going to have dh use the ingredients list to whip me up a batch in a wok. not that gloppy stuff on battered chicken like at fast food chinese places, this sounds more like the real lemon flavor glaze mixed in with stir fried chicken. so glad you posted this!
