This afternoon I had a sink full of eggplant that had to be put up. I breaded and fried about half of it and that will be used in more eggplant parmigiana. I browned some of it without breading and it will be frozen to be used in caponata. I kept out enough to fry some of the slices for our dinner.
There were two grilled chicken breasts in the fridge that I needed to use. I had seen a recipe for spinach dumplings and I wanted to make those so I made those, along with a pot of marinara sauce.
By the time dinner was done, I had three dishes of chicken/spinach dumplings/marinara — two for the freezer and one for dinner.
Vince loved the chicken/spinach dumplings. Along with that, we had fried eggplant, roasted brussels sprouts and pretzel rolls.
Now I can knit . .

Do you have the recipe up for the spinach dumplings yet? Love spinich in all forms and love dumplings, so it has to be a winner. And everything on that plate looks soooo good.

I just checked your recipe section for the dumpling recipe, too. I’d like to have it! Is there a link you could share? I know! You could make a Pinterest board and just pin any online recipes there so that you wouldn’t have to retype them onto your blog.
Just a thought, but it might save you some trouble. I would like to try the dumplings!

I guess I’m not the only one who couldn’t find the recipe for the spinach/chicken dumplings. Will it be added to your recipe file anytime soon? You have to take a knitting break sometime – right? You know Vince is really spoiled with all of the great things you make for him.
