Last week I mentioned that we were almost out of dry soup mixes. During the winter we eat a lot of soup. In the summer, we eat a fair amount of soup. Sometimes soup and a salad are perfect . . even when it’s super hot outside. Having a variety of soup mixes works well for us. If you’re interested in finding dry soup mix recipes, Google it and there are so, so many out there. These are some of my favorites dry soup recipes. The Coconut Curry is one of my favorites. Add a toasted cheese sandwich or in the summer a BLT . . that makes a great meal.
You do not have to have a freeze dryer to put these soup mixes together. A dehydrator would work fine or some of recipes don’t need anything you can’t buy in the store. Everything in the coconut curry soup can be purchased.
I think I mentioned this in the recent post about the soup mixes but I actually prefer dehydrated veggies over freeze dried for the soup mixes. First, they take up less room if you’re trying to fill jars and second, if the soup is going to be cooked in a slow cooker, the dehydrated veggies hold together a bit better than the freeze dried vegetables.

I put together three different soup mixes and made two of each. The one on the left is Potato Leek, the middle is basically a pasta fagioli soup and the one on the right is a basic soup. I will add pasta to the second and third soups, along with a can of diced tomatoes, maybe tomato sauce. To the potato soup, I will add water (there’s chicken broth powder already in there) and near the end, I will add cream or Half & Half. For the potato soup, I can add diced ham or even Italian sausage. I could also add fresh spinach or dried sweet potato leaves or kale. To the middle jar, I could add Italian sausage or even meatballs. To the jar on the right, I would probably add a jar of canned roast beef or ground beef.
