Vince is on a new diet plan. He’s working with a nutritionist and the first two weeks he’s on a pretty specific detox plan. Yesterday’s lunch was a salad – I forget what it’s called . . some kind of high protein salad. I can’t remember what all it had in it but I remember black eyed peas, black beans, cucumber, avocado, tomatoes, snow peas, kale, spinach, walnuts, almonds, carrots, red cabbage, broccoli, and more. There was a dressing with a LOT of garlic, peanut butter, olive oil and cayenne pepper. It all sounded horrible but it was so delicious. It would have been even better with a bit of honey in the dressing but it was pretty good without it.
For dinner we had 4 oz. of beef, half a baked sweet potato and steamed asparagus. I had baked a brisket over the weekend so I trimmed up some of that very carefully and weighed out Vince’s 4 ounces. I knew I couldn’t eat 4 ounces after that big salad for lunch so I just ate a small piece of the brisket. I’ve been steaming the sweet potatoes so I steamed a small one for Vince, then I added the meat into the steamer to heat it and then I added the asparagus to the steamer. Nothing on the stove – all heated in the steamer.
I think I could eat that salad every day! Because I will be gone to the doctor today, Vince is going to have the same salad (leftover) today. For dinner, we’re supposed to have air fried chicken and forget what else. I think I’m going to steam the chicken, then take it out, dry it, brush it with olive oil, season it and finish it in the air fryer. That should help it not be too dry.
I’m saying all this because I’m saying with this diet, the foods are quick to fix, not much mess to clean up and I should have more time for stitching. We’ll see!
