Many of you remember CJ who had a great blog with so many good recipes but she is no longer blogging. She shared the best fruitcake recipe in 2010 (according to my blog post) and I have made it almost every Christmas since I first saw the recipe.
If you’re thinking “Yuck! I don’t like fruitcake!”, STOP! I remember the fruitcakes in the can that my grandparents used to get every Christmas. They raved about them. As a child, as a teen, as an adult, I thought those were the most awful things – dry, crumbly, weird tasting fruit. Why did everyone like those things? I don’t know if they were only available at Christmas or if my grandparents only got them at Christmas but maybe those fruitcakes just reminded them of Christmas and they pretended to like them. I have no idea. But, trust me, CJ’s fruitcake is amazing.
Yesterday I started my fruit to soaking in brandy.
You can buy dried fruit from Walmart or the local grocery but I think the dried fruit from Nuts.com is much better. I ordered cherries, cranberries, figs and apricots. I already had dates here.
I got the fruit chopped and poured the brandy over it.
The recipe calls for 6 cups of diced fruit. I have 8 cups in the jar. I plan to make four fruitcakes.
My plan is to make the fruitcakes the first week in December.
By the way, I did contact CJ to make sure it was still ok with her for me to share this recipe and she said yes. Thank you, CJ!

My husband still raves about the fruitcake! It freezes well too! We had some in the freezer for a couple of years and it was still good!

That’s nice to know! I usually increase the recipe a bit and make two full loaf cakes and then the rest in mini loaf pans. That gives us the perfect amount to defrost and consume without feeling like we’ve been too extravagant.

-Thank you for the reminder! I keep thinking of making this, but never in time. (We do have seasonal lag here on the ocean, so our hottest months are July, August, and September, which doesn’t lend itself to thinking about Christmas!)

You don’t have to tell me about that. We have highs in the 90s the rest of this week. Thursday or Friday, our “feel like” temp will be 99 degrees. I’m so ready for summer to be gone.
