A Day in the Kitchen

First, I’ll explain why there’s a plastic folding table in the middle of the kitchen. All of our upper cabinets have the pegs that go in the holes for the shelves. When we moved in, I could see that the holes were kinda getting hollowed out but I didn’t have a lot of choice but to use them as they were. We weren’t thinking and put a lot of heavy bottles on the top shelf in the cabinet above the fridge. Thankfully I had some sturdy things sitting under that shelf because it pretty much completely fell on one side but was supported by the things under it. The same thing happened with one of the pantry shelves. Vince stuck a stack of books under all the shelves that were not stable and, with a stack of books under all four corners, that took up a lot of cabinet space so things were sitting everywhere and it was about to send me over the edge.

Vince ordered some grommet looking things that you poke in the holes, then put the pegs in and that makes the shelves more stable but I think the grommet things were meant to be used BEFORE the damage was done. There are lots of holes so we’ll just use the one above or the one below and reposition the shelves but EVERYTHING has to come out of the cabinet we’re working on. We’ve already done the cabinet above the stove. Vince is going to try to get the second coat of stain on the deck and get the fence stained over the next few days while the weather is cooperating and then we’ll get back to working on the cabinets.

Lots of words to say this: As we take things out of the cabinets, we stack them on the white table. Once we’re done with the cabinets, the white table will go back outside.

So . . now to the real story. Our friend had surgery Monday so I told them I would bring a meal Thursday. I have an eye doctor appointment tomorrow. I thought it was at 1:30 and I was thinking that kinda chops up the day and I wasn’t sure I’d have time to get all the cooking done, go to the eye doctor, come home and finish cooking and get it to them in time for dinner so I cooked today. It’s a good thing I did because my eye doctor appointment is actually at 12:30 so that wouldn’t have given me a whole lot of time in the morning to get things done.

Left to right front row: green beans, Creamed Mushroom & Brie Chicken, chicken with eggplant salsa, rice.

Left to right back row: Pumpkin Snickerdoodles, Japanese Milk Bread. I also sent a box of penne pasta and a package of bucatini. They both said they don’t like eggplant but Vince and I had the chicken with eggplant salsa today and Vince agreed it doesn’t taste like eggplant at all so I just want them to try it. We ate it over rice. The mushroom and brie chicken can be served over the bucatini or penne pasta . . whatever they want.

They got one loaf of bread and we kept one; same with the cookies. Some went to them; some stayed with us.

At least dinner for us is done for tomorrow! I’m tired.
