Tonight we were having leftover roast beef. That wasn’t the plan but Vince went to town this morning, got home late, was hungry, ate a sandwich and then he was going to have a roast beef sandwich for dinner. He asked for fries (from the canned potatoes).
I ended up browning the potatoes in the air fryer, then putting them in the bottom of a ramekin. I chopped some of the leftover roast beef and put that, along with the gravy on top of the potatoes. I sauteed sliced jalapeno peppers and put those on top of the roast beef, then topped it all with mozzarella cheese and stuck it in the air fryer on “air broil” til the cheese melted.
It was really good and I felt a bit creative! 🙂

The night before our power was shut off here in So CA (desert). Today more warnings and then an urgent warning. Shut down our computers. All lights. Fan. DH kept one tv on. So far, have not lost power. I am sure plenty of places have. It is still 102 here (was 104 about 20 min ago). two dangerous fires fairly near us. At the last alert, I took out salad shrimp and thawed them. Chopped celery, green onion. Missed some mayo, catsup and worchestershire sauce and pepper. Sliced a perfectly ripe avocado and had a perfect light dinner. It was delicious!

Marilyn, I feel for you in that heat, having grown up on the Mojave. But we never had power cuts! I do remember 119 degrees one August day before we left for vacation in Utah.
Last night we had chicken and rice soup. My hubby said it was really tasty and we could have it again. I said, it’s all leftovers plus a can of cream of chicken soup. Ah well, there’s one bowlful left in the fridge.

Why is it my family loves my throw together meals which I can never recreate? On the other hand it was pretty delicious the first time around so we are starting with quality materials 🙂
