It’s been a weird day with our meals. Oscar had an early vet visit so we didn’t eat before we left. On the way home, we stopped and got donuts. I’ve already written about all that.
I was just getting ready to cook dinner (because we eat between 2 and 3 p.m.) when we called the vet about how Oscar was feeling and they asked us to bring him back so they could check him. On the way home, Vince said “Want to get a pizza?” YES! Vince always gets two and he’ll eat leftover pizza for days . . not for meals but he likes to have breakfast really early; I like breakfast a bit later. Then, he wants lunch about 11 and I’ve just had breakfast and we eat our main meals mid-afternoon.
So, pizza about 11 meant that would probably be our only meal.
About 5 p.m., Vince said “You know what I would like? Some oatmeal!” I said “Ok. I ground some steel cut oats the other day so I can fix those.”
Then, he said “And tomato soup!” I told him I didn’t really want to make homemade tomato soup but I had Campbell’s. That was fine.
As I was about to head upstairs, Vince said “What do you think about cucumber sandwiches too?” You mean oatmeal, tomato soup AND cucumber sandwiches?
Yes. That’s what he meant!
That’s what I made. I ate crackers with my cucumber spread. Vince made a sandwich with his. What a weird dinner.

I just started some cucumber seeds in my aerogarden (along with some cherry tomato and micro greens). The cucumbers are “patios”, so they should do well in a couple of containers. So, your cucumber sandwich reference was just in time.
I searched the web for other recipes for cucumbers and saw some great ideas. I actually looked at the images section and clicked on the ones that looked good. One interesting one was to cut the cucumber in half, scope out the seeds and then fill in one side with a cheese spread and the other side with sliced deli meats. Add some greens and tomatoes and put the two halves together for a sandwich!

I’m not sure about the recipes you saw but I always add a bit of fresh dill to mine too. Lots of things you can do with this recipe and it’s so refreshing on a hot, summer day. With the deli meats, it would be a light meal with little mess to clean up. Thanks for sharing that.
