A reader (Thanks, Linda) sent me a link to Keto Pizza Casserole and I made it today. It was so good! It’s easily a recipe that anyone would eat. I used a pound of ground beef and more ham but I ended up with two dishes, each enough for two meals for us.
I cooked one today and one went into the freezer.
My guess is that this one won’t stay in the freezer long so I wrapped it in foil, wrote the cooking instructions on there and stuck it in the freezer.
I made the following changes:
- Once the ground beef was browned and drained, I added chopped onions, jalapenos and a bit of chopped garlic. Sauteed it all a bit longer.
- I added drained anchovies.
I’m trying to earn all the good wife points I can because I’m working hard to convince my husband that I need chickens in the spring. So far, he isn’t buying it but I haven’t given up.

You need chickens! Funny but I used to tell my husband about your chicken stories and referred to you as the Texas quilter with chickens since he has a hard time remembering names. Then with your move to Missouri, it became the Texas quilter who moved to Missouri. Just the other day he said to call you the chicken quilter…lol…so see, you need chickens! 😀
