Don’t even ask me how I came across this cake video but I struggled for a bit to make sure I understood it all since it mostly isn’t in English. The cake looked good, it looked easy and it looked like a nice little cake for two people. It has a can of Eagle Brand milk . . what’s not to love?

I’m not going to share all the instructions here because it’s someone else’s recipe but I followed along and did exactly as she said, as best as I could figure out. I did add vanilla. Vince said he would like for me to add lemon next time.
It is super easy and I think it’s delicious! It reminds me of a cross between an Ooey Gooey Butter Cake and a cheesecake. I searched for my small spring form pan, found it and decided it was too small so I used a high sided 8″ cake pan. I think any 8″ cake pan would be fine. The cake is baked in a pan of water. The video said to line the cake pan with two layers of parchment paper (sides and all). I kinda felt like that was to keep water from seeping in and almost didn’t do it but I’m glad I did because I would never have gotten that fragile little cake out of the pan without being able to lift the parchment paper out. I skipped lining the pan with foil because I was pretty sure that was to protect from leakage with a spring form pan, and I was using a solid pan.
I baked it at 350 and I ended up putting it back in the oven for a few minutes. I think I’ll bake it at 360 or 365 next time.
I took this picture today at lunch and the sun was so bright in the dining room, I could hardly get a decent picture.
The cake really just melts in your mouth.

Made this today and, at Vince’s suggestion, added the juice of 1/2 lemon and the rind from a whole lemon. It was SO SO delicious!! A definite keeper and so easy to throw together!
