As expected, dinner was amazing. It is the Crustless Taco Pie.
You can see from the numbers that I got very close to where I need to be, remembering that I try to stay between 50 and 55 grams of protein.
What I ate today:
- Crustless Taco Pie (one serving – recipe link above)
- Avocado – 1/2
- Copper Pennies (carrots) – 1/2 cup with no “juice”
- 1 Stoka keto vanilla almond bar
- Almonds – 1/2 cup
- String Cheese Stick – 1
There was plenty of the taco pie left over to have another day. I may freeze it and add it to my collection for the week when I don’t cook but simply eat out of the freezer. I think it will freeze just fine.

He wouldn’t even take it out of the freezer and heat it up. He loves it when I’m gone and he gets to eat the things he likes. He’s really happy to grill enough chicken thighs for a few days, make a big salad and eat just the salad and grilled chicken. But, he seriously liked that taco pie.

I would have put that in a lettuce leaf and had a wrap. It looks good!!

I tend to put cold things in lettuce leaves. I’ll have to try a wrap with something warm. Thanks!

The original recipe said to freeze it after cooking and it would be fine. She also said if you are reheating in the oven, half a pie would take 20-25 minutes. And cover so it doesn’t get too brown.
