We’re having roast beef, garlic mashed potatoes, corn on the cob and salad for dinner tonight. When I cooked the roast Sunday, I stuck the pressure cooker pot with a lid in the fridge so the grease would solidify at the top and I could scrape it all off. I love chuck roasts but don’t love all the grease.
Today I look the pot out of the fridge, scraped off the layer of grease, shredded the meat into big chunks, divided the meat into two containers for the freezer and one for dinner tonight.
After the gravy was made and cooled, I poured gravy over the meat in the two freezer containers and put the rest of the meat into the gravy pot.
All Nicole will have to do for dinner for at least two nights is cook rice or potatoes, add another veggie and salad and dinner will be done.
For tonight, Chad is supposed to call us when he’s about 45 minutes from being home. I’ll make the mashed potatoes, clean and boil the corn on the cob and make the salad. When I was baking the cake today, I roasted the garlic. I had intended to do that in the air fryer but since the oven was on for the cake, I went ahead and roasted the garlic in the oven.
Today is my next to last day here. I’m ready to be home but not looking forward to leaving them! I told Addie today that I may be living closer to her before school starts, and if not by then, surely by Christmas. She said “But I want you living in Nevada!” Not happening so she’d better be happy to have me about 3 hours away instead of 10 or 11 hours away!

Dinner sounds delicious, one of my favorite meals. When I don’t feel like cooking it, there’s a restaurant nearby which makes a wonderful pot roast. If I order it with two sides of mashed potatoes, one meal is enough to feed 2 of us! They are very generous. I could make it for less, but my mashed potatoes don’t turn out well typically. Paul’s were always so good. Of course, Regan eats even bad mashed potatoes. LOL Nicole is so lucky she will have these meals.
