I didn’t take a picture and I wish I had because it was pretty and delicious! The meat is very thin, browns quickly in hot olive oil and tasted like a thin steak though it was ground beef and ground pork.

It would be a pretty decent keto meal if you leave off the corn and serve it with chopped onions, cilantro, jalapeno peppers and a few chopped tomatoes.
It was quick. I chopped all the salsa ingredients and juiced the limes ahead of time and put them in separate containers, so all I had to do was fry the meat when it was time to eat. I’ll definitely make it again once I get home.

I like this recipe – I’ve been getting packs of ground grass-fed beef and ground bison to use in meat sauces. I could easily add a pack of ground pork and the spices to make small patties for breakfast sandwiches. I still need to try the keto bagels/muffins. I would add some avocado which is a good fat to the mix. However, I have switched to the containers of “smashed” avocados – no chemicals, no spices, just the avocado. I don’t have to worry about how ripe the fruit or cutting, pitting and then smashing the avocado. And the price is consistent and not going crazy. I need to test freeze a container so when they are on sale, I can stash a few for later use.
Hope all is well – the weather channel mentioned Nevada and now they are mentioning sirens going off in Joplin.
