This morning I wasn’t sure what I was going to fix for dinner so I went to the Pressure Cooking Today website and found a recipe for American Chop Suey that looked good.
Definitely not a keto meal but something they would all eat. Chad is a bit picky and Addie is terribly picky. Chad said he really liked it. Addie had two servings of beans and chop suey.
Addie is at the age and quite a bit bull headed but all she wants to eat is junk food. Since I’ve been here, I’ve been working on having her ask before she grabs a cookie or a sugary snack right before dinner. This evening, I was just taking dinner out of the oven and she grabbed a cookie and was just about to stuff it in her mouth when I said “NO! Not til after dinner!” Earlier we had to run to town and she wanted a snow cone. I think the snow cone stand opened today and she noticed it right off the bat. I told her we’d get one tomorrow after dinner when the weather is better but she would have been more than happy to eat one before dinner.
The recipe was easy. I usually don’t like tomato/pasta.ground beef stuff but I liked this .. probably all the cheese.

That’s good to teach Addie no treats without asking and NOT before dinner. However, if Chad and Nicole don’t follow thru it won’t last. Great job Granny!!!!!

I’m trying to set an example and not say “Y’all need to do this differently” but hoping they see by saying no to the sugary snacks before meals (all times really!), she will eat better at meal time. They eat way late, sometimes out of necessity, sometimes just because they don’t get it all together before dinner time. I’m hoping some time Nicole and I can work together with meal planning, especially having dinner on the table an hour after she walks in the door. On the days there are evening activities, they need to eat early and I know it’s hard and takes planning. They have a lot going on so I don’t want to sound like I’m being critical.

American Chop Suey is something I grew up with. It is known as a Rhode Island thing and most people in other parts of the country don’t know about it. I haven’t had it in years. Now I want some!

OMGosh chop suey in California….is Chinese food…..delicious stew composed of bean sprouts, water chestnuts, bamboo shoots, onions, celery, and bits of pork, chicken, or beef….I have never seen it like an Italian dish with ground beef tomatoes and pasta….LOL Recipes are sure a lot different across the country….very interesting.

Yum! I grew up on something like that we called goulash (I see the recipe compares it to American Goulash). I’m originally from OK, never heard it called chop suey, lol. Glad everyone liked it and easy dinner for the win! Enjoy your visit!

That looks similar to my mom’s “goulash” recipe!

Looks yummy! Sadly, my husband won’t eat it. Growing up in NE Ohio we called it Joni (or sometimes Johnny) Marzetti.

Trying by setting a good example is very good! Better for all if they pick up on it. We call that dish goulosh; I grew up with it, our boys too. Our grandchildren love it and don’t get it at their homes. The daughters in law did not grow up with the dish! ! ! LOL Are those lima beans or butter beans? What’s under?
