Vince loves cucumbers. He only asked me to do one thing before I leave on my trip — fix some cucumbers with yogurt.
That was a very small request from him since I’ve been giving instructions for several days . . water all the plants in the greenhouse twice a day; watch for scapes on the garlic, cut the asparagus every day, make sure the garden is watered, clean the litter box, take good care of Rita . . the list goes on.
For the cucumbers, I cut up three cucumbers, added just a bit of sweetener to yogurt, a bit of dill, salt and pepper . . that’s it.
I also made a double batch of food for Rita yesterday. Vince likes dealing with it out of the freezer better than freeze dried, which makes it a little easier for me too. Got that done. Vince will run out of cucumber salad but Rita will not run out of dog food!

It sounds like you are planning a nice spring break visit and Vince is going to be fine dealing with everything. He probably knows it all anyway. =)

Doesn’t Vince miss seeing his granddaughter? Doesn’t sound like he ever visits. Maybe he feels the same way I. Do about traveling to Florida lol! (Hate It). Have a fun trip

If Vince is a fan of cucumbers, he might enjoy this cold cucumber-yogurt soup (a Lebanese restaurant in Cherry Hill, NJ is where I first tried it). Greek yogurt, diced cucumbers, finely minced garlic (your scapes would work well), sea salt, freshly ground pepper and a hint of mint. Mix well. Use all in proportions to your own taste. Very refreshing.
