There are several things about this diet that amaze me . . besides the weight loss but (1) we’re never hungry and (2) it’s so easy to prepare. I feel like if we stayed on this way of eating forever, the kitchen in this house would be an adequate size. Vince usually makes the salad and I do everything else. We’re both putting less on our plates and it’s rare that we eat everything on our plate.
Smoked salmon, stuffed zucchini and stuffed jalapeno peppers. It’s the salmon Vince smoked over the weekend. I don’t even heat it up . . just add a little cream cheese and eat it cold. I did have to bake the peppers and zucchini and, there was the salad but you can see how easy this meal was to prepare and it looks pretty good .. and it was!

How do you manage to buy enough vegetables for a week at a time? I keep thinking I’d like to try this, but my hubby isn’t a fan of veggies at all.

I’m not real sure what you’re asking me. We like collard greens, mustard greens, spinach, kale, broccoli so I buy enough of those things for however long I plan to eat before going back to the store. Tuesday was a week since we’d been to the store . . or was it Wednesday? Can’t remember. We have to be in town tomorrow for something else so we’ll go to the store again but we could easily have made it til next Tuesday – 2 weeks without going to town. Amazing . . more so for Vince than for me.
As far as your husband, you could bake him a potato, or bake several and fix the extras different ways during the week. I love them chopped, tossed with olive oil and spices, then in the air fryer til the outside is a bit crusty. I can’t have that but your husband could. You could heat up corn or corn on the cob for him, a baked sweet potato, baked beans – whatever he likes.
It is easier when you’re both on the diet but it isn’t impossible for one to be and one not to be.

Ruth,When I was on it my husband wasn’t so I would make different starchy dishes and freeze in small amounts for him such as stuffed potato casserole, sweet potato casserole,corn,etc. If I fixed beef stew I would take me some out before adding potatoes for him…just things like that. He said he never felt like he was cheated because I was on a diet. I lost 30 pounds and he lost none. There are ways to make it work and it was so easy to do. Like you’ve said I never felt hungry. We have some trips planned for this month. After that I’m going to get back on it and hopefully maybe loose another 30. Hardest thing for me was giving up coke, pepsi,etc. but I’ve already done that so that will make it even easier..

From less quantity alone, I would think you’d lose weight.
