Tonight was a total screw up for dinner, but it worked. There was a chicken recipe on the menu scheduled for tonight but when I went to get the chicken out of the fridge this morning, it was still frozen solid but the ground meat was defrosted so I said to myself . . I’ll just swap these two days’ menus around.
I looked at the Taco Salad recipe but then I also looked at a recipe called 13 Jon’s Special and left the book open to that page. We had planned to have dinner at 5 because Vince was out running around. He got home early and said “Can we have dinner at 4?” so I was kinda scrambling to get dinner ready. I stirred up the taco seasonings. Then I looked at the recipe and started doing what it said. Saute onions and garlic, add ground meat, brown. Add spinach (but I used kale). I thought I needed a can of tomatoes so when I went to see when I poured those in . . the next step was to whip 6 eggs and add them to the ground meat. What? Taco Salad didn’t have eggs! I looked up I was almost finished making 13 Jon’s Special.
It was good and Vince loved it. There’s meat, kale, mushrooms, onions, garlic . . I can’t remember what else but we added grated cheddar, grated Parmesan, black olives, tomatoes, avocado and homemade yogurt in place of sour cream.
What’s amazing is look how close I came to all my macros . . and it was a total accident.

Why would they have had eggs in it.Is it to give it more protein? Just wondering I wouldn’t want scrambled eggs in my for sure. Guess cut up wouldn’t be bad.

I have no idea but it was really good. The way they cooked with the meat, you never saw “egg”. I believe it may have been more of a brunch type dish than a dinner recipe but it was delicious and we will have it again.
