You don’t have to tell me . . I know it already! When I’m doing something, and having fun, I think the whole world should do it with me and I probably sound that way about this diet but truly, I understand it isn’t for everyone. Today a reader wrote me that her husband is a picky eater and loves sweets. Even for someone like me, who loves to cook and wouldn’t mind fixing a side of pasta or a baked potato for Vince if he weren’t doing this with me, it is SO, SO much easier with us both doing it and both of us being enthusiastic about it.
So, when I sound like I’m saying “You should ALL be doing this!”, I’m not; but I do want to encourage anyone who is thinking about it . . do your research and see if it would work for you.
The cooking part is so easy!
Remember a few days ago I cooked a ham? I divided it up and froze most of it in several different packages but I kept out some because I knew this Ham & Deviled Egg Salad was on the menu. This dish took me less than 10 minutes to fix, and one bowl and a cutting board was messed up.
The recipe actually is for Ham & Deviled Egg Wraps but I just dumped it on a bed of lettuce with kalamata olives, fresh tomatoes and sun dried tomatoes.
I had made a batch of food for Rita today so when I boiled the eggs for her food, I boiled extra for dinner so when it was time to eat, I had it all ready in a flash. It would be super easy to make with leftover chicken, canned chicken or tuna.
I would make this again even if we weren’t on a diet.
