On the menu for dinner tonight was Blue Cheese Pork Medallions. I had looked forward to that dish all week. This morning Vince announced: There’s a ham in the shop fridge that needs to be used. He had bought it a week or so ago when I wasn’t with him and I totally forgot about it being in the fridge so I figured the pork medallions will be for dinner tomorrow.
I did make the asparagus, bacon and egg salad to go with the ham. It was good . . very good.
I got pretty close to having all the right numbers today. I was able to walk a bit today too. We’re still doing good.

The salad looks like a beautiful meal all by itself! I would eat that.
