Yesterday I smoked a chicken. I know I say this about everything but I really love smoked chicken.
Normally I smoke two at a time. I love chicken salad made with smoked chicken and I love gumbo made with smoked chicken. Since I’m going out of town in a few days, I figured one chicken would give us enough to eat yesterday and then save some leftovers for a couple of meals for Vince while I’m gone.
I think there are enough leftovers in the fridge that I don’t have to cook again before I leave!

YUM! We love smoked chicken, too! I tend to do more with the grill in winter here. This time of year the mosquitoes would eat me alive, and in the summer I don’t want to stand over a hot grill when it’s HOT and humid out. I don’t have a smoker like yours – maybe I’d do more if I didn’t have to watch it so closely.
When Thanksgiving rolls around, I usually get extra turkey(s) – I used to get as many as 10 or 12, but now I only get one or two. I like to cut out the breast to cook inside for other things, and then smoke the dark meat. Last year I pressure cooked the breast and it was very juicy and great for all kinds of dishes. Enjoy your chicken! Now I want some smoked chicken!!
