This afternoon Vince said “Would like a night off from cooking?” I don’t think I’ve used the stove once since we got home Wednesday. No .. I am looking forward to our dinner. I want to eat at home.
All of this came from the garden. Tomatoes, asparagus, basil, parsley, oregano and green onions.
I added a little black pepper, a little salt, a bit of olive oil and roasted it all.
A couple of zucchini were spiralized and boiled very quickly.
Dinner was ready in a flash and except for the zucchini, it all came from the garden! It won’t be long before I’m getting zucchini out of the garden.
That was exactly what I wanted for dinner. So glad we stayed home and ate here.

My friend, Stacey, is just now getting her garden in. We aren’t past the frost date, but she’s planted cold weather things, beans, and some other things she hardened off from her grow room. She’s so excited, and there you are harvesting already!
