By the time I went to bed last night, I was exhausted. Maybe I’m getting too old to cook a monster feast! It doesn’t help that my knee is absolutely killing me. As soon as breakfast was over, I hit the deck running and hardly stopped til after midnight.
I made the brine, put the two turkeys on to brine.
I made the cornbread for the dressing.
I boiled all the giblets and neck bones for the gravy.
I strained the broth to use for the gravy and for cooking dirty rice.
I chopped the gizzards and hearts and pulled the meat off the neck bones for the gravy. I chopped the livers for the dirty rice. I had some onions that had sprouted while I was gone so I chopped the tops to add to the gravy and dirty rice.
I made Pioneer Woman’s pie crust recipe which makes enough for three pies. Did I mention that someone gave us a bunch of lemons and I think a lemon meringue pie is in my immediate future? And, did I mention that I could live on pie? I would choose pie over cakes and cookies any day.
The cranberry salsa is made. One with cilantro and one without. The one with cilantro is for me and I get more! I’m betting Vince ends up wanting a jar of canned cranberry sauce, which is fine . . we have that too.
I made the pumpkin pie
At midnight, I put the two turkeys on to smoke.
Then . . I went to bed and slept like a rock.
Today I have to figure out what kind of rolls I’m going to make, stir up the green bean casserole, mix up and bake the dressing and make the gravy. All that will be pretty quick and easy. I think that’s all I have to do . . unless I think of something else I need to do.

We had our Thanksgiving last Sunday because one of my sons is an EMT and he works on Thanksgiving. It’s been a few years since I’ve hosted a big dinner for the holiday, as the kids usually go to their in-laws and it’s just me and my husband. We had dinner for 12 here and my goodness, I worked for a week before and am still recovering! I used my china, crystal and silver, my lace tablecloth and had all the people I love the most in the world around the table. I enjoyed every minute of it and it was well worth being exhausted for a few days. I don’t know how many of those I have left in me, but if this was the last time, it will be a wonderful memory!

I am cooking just for 3 this year, but still doing all the favorites. I have done nothing for prep. I spent last evening with my grandson, thankful for every minute. I am up early this morning to get pies and sweet potatoes cooked. My son will do the turkey on the grill, so the oven is free.

We have a 6 month puppy this year so I went easy on myself I talked my daughter in law into hosting this year. I made 3 desserts, beer bread, cornbread and eggs. My daughter is making a few things too so that leaves the host with the bird, stuffing, gravy and mashed potatoes. We will head over early and I will get my husband to peel and chop up the potatoes. We all help with clean up and the men wash the dishes.

Oh JUDY! I so feel your pain with the knee. Mine’s been bothering me for the past couple of months but lately it’s really bad. I can hardly stand anytime without it throbbing and hurting. Sure couldn’t have done all you did! Have a wonderful Thanksgiving!

Happy Thanksgiving, Judy! You’re making a wonderful feast. Unless you’re having guests all that food should take you right through the weekend. We go to our daughter’s for Thanksgiving, which is nice, but we don’t have all the good turkey leftovers.

Today we watch the Macy’s Parade and remark that nothing is thrown – after living in South Louisiana, a parade just isn’t a parade without “throw me something, mister” !

Happy Thanksgiving! My Grandpa always said “it isn’t dessert unless it’s pie”, so he would be right there with you on having pie! I have to admit I do like pie…lemon Meringue, chocolate meringue, pumpkin, apple, peach, blueberry, blackberry…they’re all good!
