I hope you’ve all had a great Thanksgiving. I hope your kitchen is cleaned, the leftovers are put away and you can sit and relax for a while!
We had a bit of a crazy morning, which isn’t totally unusual around here but this morning might be one for the record books. We got back on track and lunch was great.
Last night we put the turkeys on to smoke a little after midnight. I had planned that htey would be ready by noon but they were ready by about 10 a.m. so I stuck them in a cooler.
They turned out perfect. It was two 13 pound turkeys and I smoked them at 225° for 10 hours. I used hickory wood. The turkeys were moist and the smoke was just right. I wish I liked mesquite . . it’s everywhere but I think it’s too strong.
When I was in the grocery store this week buying supplies for Thanksgiving, I kept looking at some of the better frozen yeast rolls and thinking . . just buy the rolls, but I couldn’t do it. Yesterday I had so much to do that I didn’t think about the rolls. I hadn’t planned to make them til this morning but I wasn’t even sure what kind of rolls I was going to make. I’m glad I went ahead and made them from scratch. They were so good and I think they’re pretty!
I had green beans cooking on the hot plate outside and dirty rice in the pressure cooker outside.
Vince didn’t like the cranberry salsa. I loved it. I didn’t think he was going to like it so I had a can of storebought cranberry sauce as a backup.
Vince pulled all the meat off the bones and we vacuum sealed it for the freezer. We ended up with 8 packs and each pack should be enough for at least two meals. I saved out enough to make a turkey pot pie this week.
We’ve been too full to cut the pumpkin pie but that will happen soon. Vince said we need to have drinks tonight to celebrate . . not sure what we’re celebrating but root beer and bourbon cream are in the freezer! 🙂

Happy Thanksgiving. Our turkey is ready to come out of the oven, potatoes and gravy will be ready soon. I plan to smoke a turkey next week.Thanksgiving leftovers are the best. This is exactly why I have pumpkin pie for breakfast!!!

Those rolls are BEAUTIFUL and I know they were delicious..you can just tell by looking at them!! That’s one of the great things about the way you cook. Make a ton then freeze it or put it up some other way for meals down the way. Cooking smarter, not harder. I need to get another bottle of that bourbon cream. So good (bad Judy!). LOL
