I mentioned the other day that a friend had posted on Facebook that she had tried this recipe for Starbucks Sous Vide Egg Bites in the Instant Pot. At that point, I had not tried it but I trusted her and I shared the link because I thought it would be a good idea for anyone having company for Thanksgiving.
This morning I made them and they turned out delicious and quite easy!
I used 4 oz. wide mouth jars but you could use any jar that has straight sides (not the narrow mouth jars that get narrower at the top). These would be super easy to prepare for company because you could cook the bacon or you could chop ham, the night before. In the morning, whip up the egg mixture, put the bacon or ham in the jars, pour the egg mixture in and . . steam for 8 minutes then let sit for 10 and you have breakfast with no hassle.
One problem is that in the Instant Pot, you can only put four of the jars that I used. If you use the 8 oz. jelly jars, you can get six in there, maybe add an extra minute cooking time, then slice lengthwise into two servings.
For the two of us, I’ll use the 4 oz. jars but when I need extra servings, the jelly jars are a great option.
This is something I will make again . . maybe tomorrow!

If you have a grid/ cake cooler you can put on a second layer of jars, on top of the grid. It was suggested (on a canning group) that you can purchased a aluminium grid/mesh and cut it to size of your cooker and then use it for a second level of jars/bowls for canning or cooking. I looked for similar one online and didn’t see an image that looked like mine. I did purchase it at Walmart in the BBQ section (during BBQ season).

Since these are steamed and not pressure cooked, I wasn’t sure if stacking them would work.

What kind of cheese did you use? My daughter has made them, and says they’re yummy. She has tried both Pepper Jack, and Gouda, and has substituted cream cheese for cottage cheese as well. I’m thinking of using my old-fashioned overware custard cups, but have to see whether they’ll fit the pot
