I was looking for something totally different last night and came across this page with recipes for smoked turkey. If you scroll down a bit you’ll see a recipe for smoked turkey with blue corn stuffing and cranberry salsa.
I don’t have blue cornmeal so I’ll use regular cornmeal but the stuffing looks good – sausage, apple, pumpkin seeds. I’ll leave out the cumin since Vince doesn’t like that. I’m going to make half the recipe. It looks like it would make a whole lot. I can always make more if we love it.
The cranberry salsa looks like something I could sit and eat . . oh . . cream cheese, cranberry salsa and crackers sounds so yummy. I’ll have to make it without cilantro and add that to my servings because Vince doesn’t like cilantro.
We had gone out yesterday and bought what we thought we needed for our Thanksgiving dinner but then when I saw this recipe, I needed a few things plus I needed cottage cheese to make the egg bites I mentioned this morning so I was at Walmart at 7:15 this morning. The greeter lady said “You’re smart to be here early. It will be a zoo in a few hours!”
The pumpkin seeds were not easy to find. I went first tot he baking area where they have pecans, almonds, etc. No .. not there. I asked the lady working on that aisle and she told me they were with snacks, by the sunflower seeds. I went over there and they had them but it was the unshelled seeds. Nope, not going to shell them. I figured the health food store would have them but when I got over by the veggie row, I remembered they had all kinds of seeds and nuts at the end and they had them there. I was prepared to substitute pistachios if I couldn’t find the pumpkin seeds.
We’re smoking a turkey . . a couple of turkeys. One of the recipes I saw called for brining the turkey in root beer. I’m not brave enough to try that but I saw lots of people using root beer as a brine. Once all the leftover turkey is gone or in the freezer, I’m going to brine a chicken in root beer and see how that goes. I’m going to use Pioneer Woman’s brine for the two turkeys this week.
I’m really looking forward to trying the dressing and salsa.

Pumpkin seeds are also called pepitas and are found in the Mexican isle.

For YEARS when I was a kid still at home, we received a smoked turkey for a guy with my dad’s name (but wasn’t meant for my dad). My mom contacted the company that sent it but they kept coming so we always had a smoked turkey for Tgiving! It was yummy. For several years, I brined my turkey using Emeril’s brine recipe and everyone loved it. A bit of a pain but so worth it–moist & delicious.
