We are eating so much less . . it’s pretty surprising.
This morning I marinated 4 chicken breasts and this afternoon Vince grilled them. My plan was that we would have them in various dishes for the next several days but I think I may end up needing to freeze some of them.
For our late lunch, I baked one potato and I took about 1/3 of it and gave Vince 2/3. I cut off about 1/4 of a big chicken breast and figure Vince would eat the rest but he cut off about another 1/4 so that means there’s still 3-1/2 chicken breasts left.
On my potato, I added Greek yogurt (homemade) instead of sour cream, cultured butter (homemade from homemade buttermilk) and a little grated cheddar.
I even splurged and had dessert.
Six Callebaut dark chocolate chips. I probably need to think about ordering more chocolate before summer gets here again.

You’re doing great – a great example to us. LOL – my kind of dessert.

Hi I tried your Garbanza Bean Stew and it was delicious. I read that a baked potato satisfies hunger better than anything else, research has shown. Interesting idea…to try to eat less. I know I overeat esp. when something tastes so good.

So shrinking waistline and shrinking budget – sounds great!

It’s amazing that when you use smaller plates and bowls that it seems that there is so much food to eat. Love that illusion…. and eventually, it becomes true and you are actually eating less.
If I am somewhere that is a buffet, I either take a large plate and fill half of it with salad, a quarter with fresh veggies and the rest with the protein, preferably fish or chicken. Or I’ll take a small salad plate and just get less.
