You know I watch the Pressure Cooking Today site like a hawk! There’s rarely a recipe that doesn’t have me pulling out my pressure cooker. The other day I saw the Pumpkin-Apple Butter recipe.
If you’ve been on the fence about a pressure cooker, this recipe might have you running out to get one. This is probably my favorite recipe I’ve tried so far . . but that may be the diet talking! 🙂
I ended up getting about 4 pints out of one batch.
Several jars will be given away. I’m sure there will be a little of this spread on my toast in the morning. Moderation .. that’s what I keep telling myself.

I made it today. Mix it with yogurt and granola. Crazy good!

Oh, I thought those were quart jars in the picture on PCT! Since it’s not recommended for canning, and I don’t have much room in the freezer, I didn’t save this. 4-5 (or 6) cups might be do-able!
