For breakfast, I had oatmeal with strawberries. I used to put lots of sugar in my oatmeal, even when I had fruit with it but I’ve been putting less and less sugar and today I put just a few drops of honey and, with the strawberries, it was delicious!
For lunch, I smoked some ribs, which may not have been the best diet food choice but they were delicious! I made “potato” salad using cauliflower instead of potatoes and roasted some garbanzo beans. It was all good .. I think Vince was expecting the salad to taste exactly like potato salad and it didn’t but it tasted like cauliflower salad and that’s good too. When I told him this morning that I was fixing that, he kinda turned his nose up but he really liked it.
This afternoon I was wanting something indulgent and had a small container of Noosa’s Mexican chocolate yogurt and it was just what I needed!
For dinner we snacked on hummus with carrots and celery. We both feel so much better eating lighter in the evenings.
I know the weight loss will drop down to one to two pounds per week but this has been a great little boost to lose this much right off the bat. I would not have dropped this quickly had it not been for the sodas I’ve given up. Vince has lost a little over 6 pounds and his loss has been faster because he’s given up the junk food he munched on constantly.
For those concerned about my calorie count, my goal is about 1300 to 1400 per day. Today I had:
- Steel cut oats with strawberries and a tiny bit of honey – 200
- Baby Back Ribs – 350
- Cauliflower Salad – 150
- Roasted Garbanzo beans – 350
- Noosa yogurt – 150
- Hummus with carrots and celery – 150
That’s 1,350 calories.
So far, so good!

The next “trick” is to plate your meals on a salad plate. I gave up on the dinner plates a long time ago.
Unless it’s a salad and then I use a large plate or bowl. I put a lot of greens in the bowl with good veggies and just a smattering of protein/nuts. The dressing is always sour cream based. If you have cucumbers with a bit of salt and the sour cream and herbs of choice, it thins out enough that there is a dressing but not real heavy. Real sour cream is great – don’t use the low fat version. But I also use real butter and milk. Good flavor, less chemicals.
Since I finally got a pressure cooker, I’ve been looking for recipes. I know it’s boring, but I been trying to perfect each item before I move on to another recipe.I’m ok on chicken breast, thighs and pork tenderloins. I have a pork roast in the fridge to try next. I go for neutral flavorings in my trials, so I can use the meats for salads, sandwiches, etc and spice the meat up that way.
But one recipe that I really like is from a site you referred to – Pressure Cooking Today. I’m looking for grains vs the “white starches” and I love the barley and roasted cauliflower recipe.

I didn’t quite follow the recipe – cut back on the oil, cheese, butter. But it was good. I had two bowls for dinner (didn’t have anything else) and then enjoyed it for breakfast (ok – I’m weird) and then at lunch.
So, my next meal will be the pork roast (using apple cider as the steaming liquid) and the cauliflower barley risotto.

I’m so impressed with the changes ya’ll have made! It’s HARD to lose weight as ‘this’ age. 🙂 You’re both doing so well…cheering you on. Just pulled a lasagna out of the oven, but my excuse is that I have a crew of cowboys to feed. Think my lifestyle change is going to have to wait until I’m finished feeding them!
All I ever drink is water and we don’t eat junk food so I think it’s portion control I have a problem with…oh and cheese and potatoes! 🙂

I too eat steel cut oatmeal that I prepare in a small corning ware cooking skillet on top of the stove. I boil the water and then add the oats along with a mixture of dried cranberries, raisons, blueberries and cinnamon. Once done I add almond milk and sometimes a spoon of applebutter for sweetener. I eat it right out of the little skillet. Delicious. Congratulations on your weight loss. Terry
