It isn’t just Texas that has an excess of aggravating critters but you have to admit that we have way more than our share.
Before it was good daylight, I had ribs in the smoker. I had to use the flash to get a decent picture.
The racks come out and get washed and stored inside so they’re clean each time I use the smoker but when I started writing this blog post, I looked at the above picture and said . . wait a minute! That’s a dirt dauber nest right above the meat!
That had to come down because I know what will happen after 3 hours in the smoker . . it will dry out enough that it will pop open and dirt and baby critters will be all over our lunch.
I grabbed a towel to cover the ribs, grabbed paper towels to get the dirt mound down.
Came back in and got some wet paper towels and wiped down the top of the smoker.
Removed the towel and we’re back on track to have smoked ribs for lunch . . without having a baked dirt dauber nest explode all over the meat. Yes . . it has happened before. You’d think I’d learn to check the top inside of the smoker before loading it. I will from now on. We never had this problem in Missouri. You know what I’m thinking, don’t you? 🙂
