What did we eat before I came across The Mediterranean Dish?
Since we have our main meal at lunch, for dinner we either have a smoothie or something light, or sometimes nothing at all . . depending on what time we come in from working outside.
I saw the recipe for French Baked Brie with Figs, Walnuts and Pistachios and I knew it was going to be something we loved!
With figs again in abundance, I added a few more figs than the recipe called for but otherwise, I made it right by the recipe.
It was so delicious . . so delicious that for a minute I was wishing I had “tested” it when Vince wasn’t home so I wouldn’t have to share. Hey . . he’s at work and there’s more brie, pistachios, walnuts, figs and jam here!
I do believe we have enough figs in the freezer to last us til next summer so I’ll be trying this out with frozen figs to see how they work. There’s no way, after tasting this, that we can go 8 or 9 months without having it again.

I love warm brie or goat cheese with fig jam on top- I love the addition of the nuts you have in your recipe- I’ll have to try it.
