Sometimes I surprise myself when I have no plan and make a decent meal. It’s so hard for me to work without a list and a plan. This week, all plans have been thrown out the window. Vince’s work schedule has been so crazy. I’m thankful this only happens one week out of the year but ever day this week, he’s thought he was coming home for lunch and dinner, wasn’t sure what time, would call and let me know and every day except one so far, he’s ended up not coming home. The one day he did come home, I had ground meat thawed and made taco salad – quick!
Today, it was getting past noon and I assumed he wasn’t coming home for lunch. I couldn’t decide what I wanted. I thought about running to town for a Reuben at a place that makes good ones but Vince doesn’t like the place so the only time I get to go is when he isn’t around. Then I talked myself out of going – you know how I hate leaving home.
Then I thought about making a smoothie so I went and picked some figs (and even ate a few!) and got some frozen peaches out of the freezer. What would be better than a smoothie with home grown figs and peaches, storebought oatmeal and spinach . . and homemade milk kefir? Then I talked myself out of that. That sounds good for later this evening but I was wanting real food for lunch.
I walked over to the freezer and was just standing there looking to see what I might find. I found a package of brisket. When we smoke a brisket, I usually divide it into three or four pieces, vacuum seal them and freeze them. There was one . . right there . . smoked and ready to heat and eat.
There are still home grown potatoes so I sliced and pan fried potatoes, added some onions and roasted Hatch peppers.
Then I added some chopped brisket.
Cheese, sour cream and black olives topped it off, along with a little Slap Ya Mama seasoning.
Better than I could have bought anywhere nearby. Downright yummy, in fact. And, there’s enough for my dinner if Vince doesn’t come home and I doubt he does.
I’m ready for this week to end and I’ll have my husband back on our regular schedule!
