The one meal I struggle with is breakfast. Bacon, eggs, toast. I could eat that every morning, but I don’t. I’m trying to eat oatmeal every morning! We have to have a little variety though. The last couple of days, we’ve veered away from oatmeal.
French toast made from the Hawaiian Rolls, fruit and bacon. That was a nice change. I didn’t have pineapple juice for the rolls so I drained a can of crushed pineapple, cut back on the brown sugar since the pineapple was in syrup and even added a bit of the crushed pineapple to the rolls. They were so good.
Eggs, grits, country ham and buttermilk rolls. Now that’s a hearty breakfast! Vince loves country ham. I like it ok but would much prefer bacon.
I think tomorrow we will have Migas. I have everything to make that except chorizo so I’ll just use ham. I’ll do all the chopping tonight, make the tortillas tonight . . and that will save time in the morning.
Why do I struggle with ideas for breakfast? I’m going to spend some time searching for breakfast ideas . . I need new ideas. What’s your favorite breakfast that would be man pleasing but not require hours in the kitchen? I have to have it on the table by 6:20 and I’d prefer not to be up at 4 a.m. starting breakfast.

Our usual breakfast around here is called ‘Stacks’. It starts with 2 pieces of whole grain toast slathered with mayo and butted together. Atop that, I put a couple of slices of warmed Danola-type ham. Then I top that with 2 slices of cheese (usually American). The crowning touch is sunny-side-up eggs (three for him and 2 for me). I serve this with home canned ‘Cypress Inn Green Tomato Pickles’ on the side.

My husband likes French Vanilla Stonyfield yogurt with my homemade granola (7 different nuts and seeds {and several dried fruits added after baking} with maple syrup, honey, cinnamon, butter and vanilla poured over before baking.)

When I was growing up, my father pretty much took care of his own breakfast. (usually oatmeal). My mother wasn’t a morning person, and once I was old enough to pour a bowl of cereal without help, we were pretty much on our own. We only had a fancy breakfast (eggs, pancakes or french toast) on Saturdays.

I usually do Cheerios in a bowl. BudgetBytes.com has a Spinach, Mushroom, and Feta Crustless Quiche that is quite good, if a little salty from the feta. My kids wouldn’t be caught dead eating spinach or mushroom, so I make and eat it for lunch for a week! Trent at The Simple Dollar makes Breakfast Burritos and freezes them. I’ve tried oatmeal in the crockpot without a whole lot of success. Have you tried the Instant Pot for breakfast? My sister likes quinoa bowls, too.

Crustless Breakfast quiche sliced and wrapped in 1/2 tortilla or in the case of this week, breakfast strata. I make it on Sunday pop it in individual containers and re-heat in the microwave for breakfast the rest of the week.

Tina already mentioned them but I was wondering if you thought maybe Vince would go for a nice bowl of Cheerios?!! LOL I was recently on a vacay with a couple of friends and one does 2 1/2-3 C. of Braum’s skim milk with heaping scoop of mixed vanilla/choc Slim Fast. She says that way she gets her vitamins AND calcium so I’m trying that for awhile. But I also love a big glass of V8–yummy!!

Monday -Saturday: yogurt with either a hard boiled egg or fruit or 1/2 english muffin or a small bit of cheese. Sometimes a bit of leftover fish. Sometimes a dab of peanut butter. Always a little protein and carbs to keep us feeling full. Sometimes a 1/2 bagel or a small bowl of oatmeal.
Sunday: a slight splurge. a scrambled egg, fruit and maybe jam on our english muffin. Sometimes a slice of bacon for each of us.

6. I make a fake benedict. Toast, ham slice, cheddar cheese topped with easy over eggs. The runny yolk is the “sauce”
No oatmeal here. Just do not like it.

Breakfast burritos that we make up ahead then freeze them, nuke em with green chili mmmm.. Huevos Rancheros, mug eggs= eggs in a mug with favorite ingredients then nuke. Fruit with Yogurt, Pizza lol Don’t laugh-he will eat left over pizza or if I make an egg pizza with biscuits, and gravy, green peppers, eggs, ham- his pepperoni and olives. I usually bake the biscuits with the green peppers or jalapeno peppers too and Ham (same with the pepperoni, and olives). Then I scramble the eggs and put over with a slice of cheese and gravy … mmmm Yep calorie laden as well ….

Around here everyone is on their own for breakfast. Always have been ever since the kids were old enough to pour their own cereal & milk or fix toast. My brain doesn’t function much before 8am. I mostly just want coffee and something I don’t have to cook first thing in the morning.

I made bacon and spinach quiche yesterday afternoon, and I’ll have it for breakfast until it is gone.I usually just have a bagel thin and cream cheese or yogurt.

Interesting comments to your post. I will be watching for the results of your breakfast menu research. Breakfast is the most frustrating meal of my day. I’m not a breakfast person, but I find myself with 2 adult farmers who need a good meal to keep them going until lunch. I’m about ‘up to here’ with eggs prepared a dozen different ways. –They still are eggs. So who says breakfast must be eggs? Or oatmeal? But what else seems palatable and easy/fast to fix at that hour of morning? The overnight dishes require too much baking time. And a hot oven in a summer of 110+ degree days is not a good thing, either. So, please find us some good ideas, Judy.

The only time I want a cooked breakfast is when I’m eating out! When the kids lived at home I’d sometimes make French toast, waffles, or pancakes on weekends, but it was cereal or toast during the week. I’m not a morning person!

I love breakfast and can eat oatmeal (usually steal cut type with added ingredients like raisins, almond slices, flaxseed, chia seeds, cinnamon and a little brown sugar)., eggs fixed any way possible, ham, bacon, quiches, waffles, French toast, pancakes and any other breakfast food. I just wish it were done when I got out of bed.! My DH would just as soon eat cold leftovers than wait for a good breakfast. I even eat breakfast foods for dinner if my DH is not eating or gone for some reason. I would gladly eat any of the breakfasts that you’ve posted about over the years.

Not a morning person here, but I could fix DH’s breakfast in my sleep..and did for 25+years. Now he eats homemade granola w/dates & raisins, homemade fresh OJ,1/2 an english muffin w/jam and a cup of coffee. I always give the kids a grilled cheese sandwich with a cup of tomato soup during the cooler temps and cereal or pancakes when it was warmer.

Week days we both have cold cereal and fresh fruit. If it’s cold we have oatmeal with golden raisins. Sundays we have pancakes, waffles or french toast with bacon. We are not very active and try keeping our weight down which is an ongoing challenge.
