The hash brown casserole I make is one I’ve been making forever and I don’t have a written recipe but I went through some online recipes. This one is almost exactly like mine only I mostly of the time don’t use the onions but will sometimes add a bit of onion powder. If I did add the onions, instead of just stirring them into the casserole to bake, I would saute them in the butter, then put them in with the other ingredients.

I guess I am the only one who has never made or eaten this dish. I will remedy this soon! I do have a question. Do you mix it all up then divide into dishes and freeze or do you do any cooking to them before freezing?
How long will this last in the freezer? We are new to the whole cooking for two again. I am so used to cooking large amounts that I am not sure I can make anything small enough, but I am trying.
Do you know if cakes (from scratch) can be cut down? Right now I am just making regular cakes and giving away 1/2 right off the bat.

Yes, I mix it all up just like if I were going to bake it and then divide it into three dishes. I don’t know how long it will last in the freezer. They never stay long in our freezer. I’m sure that within a month or so, I will have used both of these. If you’re making a cake from scratch, simply divide the recipe in half . . if it calls for 3 cups of flour, use 1-1/2 cups. If it calls for 3 large eggs, use 2 small eggs. Bake it in a smaller pan and use a cake tester to see when it’s done.

OK, these freeze? That is important to know. I would like to make something like this, but I’d need to freeze it in 2 portion dishes, or even 1 portion dishes.

I like to make this one for potlucks and with ham for Easter. My husband likes it with “crunches” so I top it with crushed corn flakes and drizzle melted butter.

Adding Panko on top is also a great crunch and there are a variety of seasoned Panko flavors.

I make mine like Kim’s, with some crunchy crushed corn flakes on top, and I substitute onion powder for the onions also. We call them cheesy hashbrowns, and my adults boys and daughter-in-law L-O-V-E them. I think they are secretly disappointed if I make any other potatoes or rice.

Fresh potatoes are so easy to make that I’ve never been able to eat any kind of frozen potato. Don’t mean to sound “snobby”, it’s just not something I can eat. And I’m not a picky eater.

That’s the same recipe I use, but they are called Party Potatoes. Isn’t that an amazing recipe?! Sooo goood! Of course, I never met a potato I didn’t like! Now I’m craving them.

Even though I make them at home, any time I go to Cracker Barrel, I still get Hash Brown Casserole as one of my sides. Love this dish!

I used to have these quite often but had forgotten about them. they never had a name that I knew of. I’m having a quilt group over in a few weeks and had decided to make a quiche, I think this will be the perfect side and I won’t have a lot left over as dh isn’t a fan of them. thanx for the memory jog!
