When the hens first start laying, not only is it fun to weigh the eggs and watch as they begin laying larger and larger eggs but it’s fun to crack one of those big eggs and find a double yolk. I knew that big one I got this morning would have a double yolk and it did.

We’ve had them with the rubbery shell . . kinda feels like a balloon. We’ve had a couple of the itty bitty eggs. We’ve had them that had really weird rough sandpapery shells .. nature at it’s best!

When I first went to Texas, I worked with a really nice guy who was a true Texan. It took me quite a while to understand him. One day he came in to work and talked about the egg that he had over the weekend that had “two yallers.” This brings back that memory.

I’m curious. Do you break your homegrown eggs into a bowl before you add it to whatever you are making? And then when you find a double-yolked egg, do you take one yolk out? The linked website was very interesting. I didn’t know so much could happen to an egg.

No, I never take the extra yolk out. It depends on what I’m using the eggs for. If making them for breakfast, I prefer yolks to the whites so I’m happy to have them for my breakfast. If my cake calls for 3 eggs and all 3 of them had double yolks, I’d do some adjustments but mostly I just use a smaller egg for one of my other eggs in the ingredients.
Yes, I always break eggs into a cup before adding them to anything.

Growing up we always bought our eggs from the chicken farmers and often got double yolked eggs! Here in Canada I find the egg shells paper thin and I have a hard time cracking the egg without little bits of the shell breaking off – I break the egg in a little dish before adding it to the cake, etc. I am making. In Austria the shells are very hard! Anyway – Mom usually made French toast with those double yolked eggs! Cheers! Evelyn
