This is the time of year when I’m trying to clean out the freezers and consume what’s in there so we can be ready to fill it again. I’d like to get another half a beef and though I don’t freeze most of the spring/summer veggies, some of it does go in the freezer. Yesterday I took a grocery sack downstairs to the freezer and brought up the food we’ll need for the weekend. I had also taken out a package of ground beef but used it before taking the photo. In the picture there’s venison sausage, a chicken, a dozen tamales, smoked boudin, peaches and sour cherries. You’d think taking this much out of the freezer would make a noticeable empty spot but it didn’t. Kinda like using fabric from the stash I suppose.
Everything I cook this weekend will take little time so I’m hoping to get lots of sewing done.
Tonight – Chili, hot tamales, salad, cornbread muffins
Saturday – Red beans, sausage and rice, broccoli slaw, cornbread
Sunday – Gumbo, rice, smoked boudin, salad and crackers.
All three meals will provide leftovers for Chad to take back to school, as well as lunches for us next week.
The peaches will be used for a peach cobbler and the cherries will be used for a cherry pie.

We do usually have spaghetti & meatballs on Sunday but we’re not this Sunday. There’s a reason for the deviation and since I don’t like spaghetti & meatballs, I’m happy!

It all sounds good (especially the tamales and peach cobbler)… just let me know what time to be there! LOL! I just may have to pick up some tamales while I am in town today… you have “flung a craving” on me!

It all sounds so good. I hope to be in the Shreveport area this spring. If I can think to bring a cooler with me can you sugest a good brand of boudin that I might be able to find there. I picked up the Slap ya Momma last year. Yummy.
