I’m sure there are real recipes out there for this and they’re probably better but my “recipe” was very simple and very delicious.
I used three boneless, skinless chicken breasts. I sliced them lengthwise to get three pieces that looked like three thin chicken breasts. I would have used panko if I had it but I was out so I used flour and seasoned it with salt, pepper, basil, garlic powder and onion powder. I dipped the meat in milk then in the flour and browned it on both sides in a butter/olive oil mix. Then I baked it for about 20 minutes at 350. The meat was so thin, it was pretty much done once it was browned.
I sliced up mozzarella cheese and put a couple of pieces on each breast, then a slice of tomato, then a bit more salt and pepper, then a few basil leaves and another couple of slices of cheese and stuck it back in the oven til the cheese melted.
I had a huge sweet potato – REALLY big . . so I peeled it, cut it into chunks and boiled it. Then I mashed it, added a bit of butter and maple syrup and we ate it like we would have a baked sweet potato. I was afraid since it was so big, it might be a bit fibrous but it wasn’t. It was delicious and I absolutely love the color!
The beans are cannellini beans. I opened a pint jar of the beans I’ve canned, heated them up and they were great. I’ve mentioned on here before that my big canner holds 19 pints. I’ll use as many different beans as I have handy to fill 19 pints and can them all at once. I usually can at least 6 pints of cannellini because Vince loves those, then a few pints of black beans, garbanzo beans (regular and black), pinto beans, small red beans, lima beans – really, just whatever I see first is what gets canned unless Vince asks for something specific. Then I fill the cases (12 jars) with a variety of beans. We try to eat beans every day – even if not on our plate, we’ll put them in a salad or make hummus so unless I need something specific, I look in the top box and grab whatever I see and try not to have the same type beans two days in a row.
