Yesterday I opened a freezer and had a landslide. I’m always afraid a frozen turkey is going to fall out and hit my foot. I grabbed on thing to get out and everything started falling. I couldn’t just drop whatever was in my left hand and I was trying to hold everything back with my right hand but keep my feet way back in case something did fall all the way down. As soon as I managed to stop things from falling, I said . . enough is enough. I took a turkey out and it’s in the fridge defrosting. I’ll cook that.
It was two containers of dill pickle soup that we were having for dinner that I was trying to get out so I got those out. Got a pound of bacon out and put it in the fridge to defrost for today’s breakfast (not the whole pound . . but I could!)
There were four of the gallon zipper bags full of cut up green tomatoes. Those were the real problem because they don’t sit flat and the inside of the bags will shift so I took all those out and started cooking them down to make green tomato salsa.
Then I realized I needed 6 bell peppers, 6 jalapeno peppers, 6 onions, cilantro. I have all that stuff freeze dried but why use so much of it when I can go to the store and get more . . except what’s freeze dried came from my garden. I went ahead and cooked down the tomatoes a bit, let them cool, poured it all in a big pickle jar and stuck it in the fridge.
At some point today, I’m going to run to the store and get what I need to get this job done!
While I was grabbing stuff out of the freezer, I found a container of black eyed peas and chicken. We like that a lot so I took it out. We’ll have that for dinner tonight, along with baked sweet potatoes and a salad. Quick and easy since I’ll be finishing the salsa and canning it.

I bought plastic coated wire baskets to hold all of my DH ground venison, roasts and other like items that need to be contained to keep them from falling out every time I opened the door. I also use larger Sterlite plastic bins – makes it so much easier to see what’s in the freezer.

The biggest problem is that there’s too much in the freezers. After the holidays when turkeys and hams were on sale, Vince bought “a few”. I had to take half full bins out in order to make room for the big items so now, the rolls of ground beef are falling out. I have too many gallon ziploc bags of tomatoes in the freezers that I need to process. Once I get a lot out, I’ll defrost the ones that need to be defrosted, organize with my bins again. I’m so ready to be able to open a freezer without holding my breath and hoping nothing falls out and hits me.
