You know I’m a big fan of Louise at The Salted Pepper. She has a website with printable recipes but I do love her videos at youtube.
When I saw her making Dill Pickle Soup, I could not stop thinking about it. Most of the time, I can look at a recipe and have a good feel if it’s going to be amazing, good or not so great. Sometimes I will think . . if I change “this” to “that”, we would like it better. But, this Dill Pickle Soup had me stumped and I really had no idea what we would think about it.
It was maybe the best soup I’ve ever made. Vince had not seen the ingredients and I think just the thought of dill pickle soup didn’t sound very good to him but he loved it too.
The only thing I changed was that I used hamburger dills (the already sliced kind). I didn’t have any dill pickles and Vince went to Aldi last week so I asked him to get some – whole ones if they had them, but they didn’t have them. I’m not sure how that would have changed the flavor but we were so happy with the hamburger dills, I’ll probably use them again next them . . and there will be a next time!
I do recommend this recipe. I don’t think it was so “dill pickly” that someone who doesn’t like dill pickles would be turned off by it but that’s hard for me to know since I do like dill pickles. I asked Vince if he thought someone would like it if they didn’t like dill pickles and he said “yes, just don’t tell them there are dill pickles in it.” OK . .

So I love dill pickles and husband, as usual, hates them. I may just have to try this recipe!! And definitely not tell the husband. ??

I just asked Vince again if he hadn’t known there were dill pickles in it, would he have tasted them and he said no. Not promising your husband won’t know but . . may be worth a try.
