After watching a video about making sour cream and reading several posts about it, I had to try it. We had extra cream on hand so yesterday morning I poured a quart jar about 3/4 full, added two heaping tablespoons of yogurt, stirred it all, stuck it in the Instant Pot, added water about 3/4 up to the top of the jar (water in the Instant Pot insert – NO water in the jar with the cream). I put the lid on . . not closed but simply sitting on the rim of the Instant Pot, and hit the “yogurt” button.
Last night I retrieved the jar from the Instant Pot, tasted it and . . oh, my goodness . . it was so good. I ran downstairs with a spoonful for Vince to try. He said “That’s the most amazing sour cream!” I want to have baked potatoes today!
I’ll admit that full fat whipping cream is not something we should eat much but a spoonful here and a spoonful there can’t do too much damage, right??
