For the last several days, I’ve been thinking about Butter Mochi. We both love it so I know if I make it, we’ll eat the whole thing and we don’t need it. I kept thinking I’d wait til Thursday and make it, take some to Nicole and then Addie could help us eat it but, it got the best of me and I made it today.
I use this recipe and only make half of it and, as you can see, I make it in a skillet. Also, when making half a recipe, I only use one can of coconut milk and don’t use the evaporated milk. We did a great job of waiting for it to get cool before we cut into it.
