I’m quite sure we all have different expectations when it comes to the perfect pancake. For years I made the same recipe every time I made pancakes. The old recipe was good and almost the same as this recipe that I tried a couple of weeks ago so this is now my new favorite recipe. With other recipes, when I had leftover batter, it would get kinda gunky if I tried to keep it in the fridge overnight.
I made pancakes Friday morning and put the leftover batter, which was about exactly half of it, into a quart jar with a lid and put it all in the fridge. This morning I got it out, it looked good and tasted exactly like fresh made.
