This morning I was going to fix biscuits, eggs and bacon for breakfast. For some crazy reason, I thought scrambling eggs and serving them in flour tortillas would be quicker. Not so much.

By the time I fried the bacon, grated the cheese, sauteed onions and jalapenos, cut up an avocado, added lime juice to the freeze dried pico . . I think it all took longer and definitely messed up more dishes.

Since Vince doesn’t like cilantro, he does like the pico. It’s so easy to free dry, then add a bit of water, a bit of lime juice, shake it all up and let it sit for a few minutes. Tastes just like fresh.

I did put the bacon on the table but everything else, we just came into the kitchen and fixed it so I didn’t have bring everything back to the kitchen when we finished eating.

It was a nice change from just eggs, biscuits and bacon or eggs, bagels and bacon.
Dinner is going to be leftover cabbage and ground beef. I think I’m going to try to make the Twice Baked Potatoes like the BBQ restaurant serves. I’m pretty sure it’s made with dried potato flakes, or instant mashed potatoes .. not even sure what you call it but I do know we have some.

Looks really yummy, except I’m with Vince on the cilantro. I definitely like breakfast in a tortilla, but I fix it for lunch instead. We both like a simple egg sandwich for lunch too. I have been buying the carb balance tortillas again lately as I’m trying to cut back on the carbs I eat.

Judy, when you mentioned your dinner plans I remembered what a friend of mine posted yesterday. Thought of you.
She said: Cabbage burger-cooked hamburger meat cabbage and onions. Stuff in bread dough let rise and then bake. They are so good!!
