Yesterday I posted about the dandelions “brewing” for making jelly today. I got it done! There’s a link in yesterday’s post to the recipe I use, as well as photos of the dandelions that were used. I doubled the recipe.
Fifteen half pints and one little squatty jar.
It’s such a beautiful, clear yellow. I walked out to get the mail and seeing the dandelions in the yard made me smile, even though they are a weed.
I couldn’t wait. Had to fix a biscuit with jelly. It’s very mild and tastes a lot like honey. You’d never know it came from weed that most homeowners don’t like at all.

Do you use the hot water bath or pressure canner? I’m interested in the other jelly, too. Maybe next year I can try it; most of our dandelions are puffballs now! And I wonder what kind of yellow dandelions would dye fabric, since it’s such a pretty color jelly.

I water bath the jelly. I also wondered about dying fabric and may try it sometime.

According to master gardeners, a weed is just a plant growing where it isn’t wanted. 🙂

That is so true! I even learned to appreciate the benefits of stinging nettle but I sure hated getting in it and not noticing it til it started stinging.
