One of my very favorite meals may be chicken & dumplings. Vince doesn’t mind eating that but it isn’t his favorite. Last night I was thinking about what foods I need to make that I enjoy that Vince doesn’t enjoy as much so I can have those before he gets here.
My sister and I used to beg my grandma to make dumplings. Back in those days, she’d go out, grab a fat hen, butcher her, stew it til tender, then make a huge pot of dumplings so it was way more work for her than or me to make them these days.
The other day when I had half a quart of chicken left, I had planned to add more broth, carrots and celery, and egg noodles and make a pot of chicken noodle soup but this morning, I woke up wanting dumplings.
I use the recipe my mom always used. They take time just because we leave them sitting out at least an hour to let them dry out so they’ll be a little chewy and not mushy. Mom would always say “Roll them out THIN! Potato chip thin!”
A bowl of chicken and dumplings! Not much I like better than that.
Along with a salad . . that was my main meal for today.
I only made half a recipe of dumplings and used half of those and only ate half of what I made. The remaining dumpling dough went into the freezer (already rolled out and cut into pieces) so all I have to do for my next meal of dumplings is open a jar of chicken and add the frozen dumplings. I have plenty of time to have it at least one more time before Vince gets back.

My husband loves it too. His mom made the same type of dumplings you make. My mom always made the big fluffy dumplings. It’s interesting how different dumplings can be.

It’s definitely all in what you’re used to. I don’t like the big fluffy ones and if I don’t let these sit out for at least three hours, even though they’re thin, they’re not chewy like I like them.

I wonder if my husband would like these. I’ve only had “big fluffy” dumplings, and I think he has, too, because he wrinkles his nose and talks of “mooshy” dumplings. Chicken and dumplings often sound appealing to me!

My mom made drop dumplings with Bisquick. Those were the only ‘dumplings’ I knew. One day Bob asked me to make chicken & dumplings so I called Mom to find out how to make them. Mom’s dumplings were usually the size of golf balls. Well…….my dumplings were more the size of softballs! Bob looked at it and asked what (colorful language here) those were. That’s when I found out that dumplings are rolled dough – at least in his family. Since then (40 yrs or so) I’ve never made my kind of dumplings. When Bob has a yen for chicken & dumplings guess who cooks?

What do you mean by “half quart of chicken” and “jar of chicken”? How/why do you store them that way?

I can everything that tastes good canned. Chicken, chuck roast, pork loin. It’s shelf stable for years, requires no refrigeration and when I use it, I open the jar, shred the meat with my fingers if I need it shredded.
For most of the food we keep on hand, we aren’t affected by power outages, can grab a few jars of food and take with me if we’re going out of town and don’t want to eat out. It’s just the way we live – not perfect for everyone but works for us.

I miss my Mom’s (and Grandmas…) Chicken and Dumplings! When I was older, my Mom used to make them when my Dad went fishing. Since she didn’t know when he would be home, the chicken and broth would be in the crock pot and she would have the dumplings ready to go since they don’t take long to actually cook. That’s one of those things I never really mastered. I guess I should practice more…:)

Looking forward to trying this! Is the recipe listed that starts with 2 c Bisquick and includes 1 egg already the “half recipe”, or if you make half the recipe, do you still use a whole egg? Thanks In Advance!

I did use a whole egg but used the smallest one in the carton. That is the whole recipe and it makes a LOT.

I just made Chicken and Dumplings last night! I made the ball dumplings, because that’s what I have always had. I’m going to try the flat dumplings sometime, too.
